I visited the Onna Branch (恩納店), located along the coast of northern Okinawa, and it totally blew my mind. Here’s why you should try it too!

🍜 What is “Kinchichi Soba”?

“Kinchichi” is a unique name combining the owner’s surname Kinjo (金城) and his dog “Chichi” (ちち).
Since opening in 2008, Kinchichi Soba has gained a cult following for its handmade noodles and deep dedication to Okinawa’s food culture.

Each branch offers a slightly different menu. The Onna shop is known for its dipping-style soba, while the main shop in Yomitan offers a spicy “tantan” version!


🔥 Signature Dipping Soba – Only at Onna!

What makes the Onna branch special?
It’s one of the only places in Okinawa where you can try Okinawa soba served like ramen tsukemen (dipping noodles).

The broth is rich but smooth—made by simmering pork bones and local chicken for 3 days, and finished with bonito flakes for that umami punch.
You can choose from 3 flavors:

  • 🟢 Standard dipping soba
  • 🔴 Spicy “Aka-dare” with housemade chili miso
  • 🦐 Shrimp miso with roasted sakura shrimp

🧵 Handmade Noodles with Okinawan Wheat

Kinchichi’s noodles are made from scratch—thick, chewy, and infused with local wheat bran from “Shimamugi Kanasan” grown in Okinawa.
The result? A bouncy texture and earthy aroma that elevate the entire dish. You’ll taste the difference right away!


🥢 Soup & Side Dishes: Full of Flavor

The soup is called “Golden Dashi” and includes 8 kinds of dried fish, carefully extracted at low temperature for a clean yet flavorful taste.
The pork and tofu toppings are soaked in special broth for extra depth.

Don’t miss the “Jūshī” rice on the side—a seasoned rice dish with chicken and veggies, mixed after cooking (not boiled together), to retain the rich flavor of the broth.

Owner Kinjo-san isn’t just a chef—he’s also working with local farmers to promote Okinawan wheat.
Even though only 5% of the current noodles use it, the goal is to support wider usage across Okinawa restaurants, so that the whole community benefits.

Their philosophy? “Delicious food with a deeper meaning.”
